The mulberry is one of the oldest cultivated plants in the world. The substances contained in mulberries are reputed to have health-giving properties for the human organism. Hildegard von Bingen recommended mulberries in cases of high temperatures, coughs and sore throats due to their alleged capacity to dissolve mucus. They are also said to protect the liver from inflammation .
Mulberries contain several vitamins, including vitamin C, and various secondary plant substances, such as essential amino acids, minerals such as potassium, calcium, magnesium, iron, zinc and maganese [1 to 5].
Another health benefit accredited to mulberries is their antioxidant content, giving them their reputation as the perfect anti-ageing fruit. Antioxidants neutralise free radicals that can damage the genetic make-up of our cells. When genetic material is damaged in this way, diseases such as diabetes, arteriosclerosis or rheumatism can occur .
Dried mulberries contain the same nutrients as fresh mulberries, only in a more concentrated form. We recommend dried mulberries or other dried fruits with similar properties, particularly when you need extra nutrients or if you cannot always obtain adequate supplies of them.
Our „shotut“ organic mulberries are dark and sticky, yet satisfyingly soft and large (depending on the harvest). Their flavour is sourishly fruity and highly aromatic.
The mulberries are also called shotut in Uzbekistan. Tut means mulberry and sho is derived from the old word for shah, or king. In times past, dried black mulberries, known as the king of mulberries, were served at court as a supremely exquisite speciality, reserved solely for the king, queen and esteemed guests.
Origin and Production:
We source our organic mulberries exclusively from Uzbekistan. Large parts of the region are certified for organic products, and are cultivated by the farmers living there. The farmers are part of a large community made up of 3 groups, Dustkul Bogi, Turkiston Gulba and Turob Bobo. 1,000 farmers and their families belong to the community.
Currently there are no standards covering international FAIRTRADE certification for mulberries. The mulberries comply with the usual Fairtrade requirements, but cannot bear the logo. The Fairtrade famers do not receive an extra bonus for the additional work they do. The Fairtrade concept has become second nature and is a part of life, even if the monetary rewards are less.
Our mulberries are harvested by hand when the berries are fully ripe. After harvesting, they are carefully washed and gently dried using solar energy. The drying process is very eco-friendly, using a solar drying method that has a minimal impact on the product.
The mulberries are pressure treated in Austria. During the pressure process, the combination of pressure and time ensures that the product is completely free of pests.
