Our organic Fairtrade apricot kernels are distinctively fruit, yet nutty too. They are very popular as an alternative to almonds and can of course be eaten raw.

Apricot kernels, are a good source of minerals and vitamins. Apricot kernels are a good source of minerals and vitamins, primarily B vitamins, magnesium, phosphorous and iron [2]. They are ideal for a balanced healthy diet.

Apricot kernels are similar in appearance, colour, shape and texture to almonds, but are crunchier, fruity and aromatic, as they were previously surrounded by a fruit.

Only very sweet apricots are used for sweet apricot kernels. This ensures that amygdalin levels are low and the kernels can be eaten without any concerns.

Origin and Production:

We source our organic Fairtrade apricots kernels exclusively from Uzbekistan/ Samarkand. Large parts of the region are certified for organic and FAIRTRADE products, and are cultivated by the FAIRTRADE farmers living there. The farmers are part of a large Fairtrade community made up of 3 groups, Dustkul Bogi, Turkiston Gulba and Turob Bobo. 1,000 farmers and their families belong to the community. By working with Fairtrade, the farmers can provide their families with a secure income and offer their children new opportunities.

After being carefully harvested, the apricots are washed, halved and pitted. The shell of the kernel is cracked open and the actual apricot kernel is gently sun-dried. The drying process is very eco-friendly, using a solar drying method that has a minimal impact on the product.

The apricots are pressure treated and laser sorted in Austria. During the pressure process, the combination of pressure and time ensures that the product is completely free of pests. When undergoing several rounds of cleansing in the laser cleaning facility afterwards, the organic apricot kernels are checked individually to make sure they contain no impurities.

Why you should germinate our nuts!

Germinating nuts:

  • Inhibits and reduces levels of phytic acids

Phytic acids occur in natural foods, inhibiting digestion of minerals. Reducing amounts of phytic acids allows the minerals to be absorbed by the body, providing it with the associated benefits [1].

  • Inhibits and reduces tannins

The plant deploys tannins for its own protection. When excessive amounts of tannins are digested, flatulence (digestive problems) may result and consumption of iron and calcium (or minerals) may be reduced [2].

  • neutralises enzyme inhibitors

The human body needs certain reactions to take place in order to function efficiently, and certain enzymes are needed for these reactions. If the enzymes are functionally inhibited, the body can’t work optimally. That’s why it’s important to reduce inhibition to a minimum.

  • Supports generation of useful enzymes and
  • Increases vitamin levels, especially B vitamins

The germination processes cause the plant to start budding again. Many important vital substances are activated and mobilised, for example vitamins and enzymes. This makes germinated nuts considerably more nutritious than nuts that are not germinated.

How to germinate the nuts:

Good results are obtained when the nuts are placed into lukewarm water in the evening and left overnight. The nuts will have germinated by the next morning. If you have more nuts than you need in the morning, store them in the refrigerator without the water. If you want to keep them for a longer period, you can dry the nuts on a dry surface or in the oven.

Depending on the foodstuff used, germination periods are generally around 7 to 24 hours.
