Cherries contain anthocyanins, specifically, the substance cyanidin.
„Anthocyanins have an antioxidant effect that can exceed the benefits provided by vitamin C and vitamin E by a multiple factor, at least in vitro. … They bind free radicals in the body, protecting DNA, lipids and carbohydrates from damage. More positive effects ascribed to anthocyanins: they are said to improve the sight, inhibit inflammation and protect the vessels.“ 
„Sour cherries contain vitamin A, B1, B2 and E, as well as considerable amounts of potassium and folic acid.“  The cherries‘ vitamin C content can be as much as 10x that of lemons . „Additionally, sour cherries are one of the few sources of natural melatonin, which regulates the sleeping/waking cycle … As a result, the sour cherry is said to have a positive effect on sleep disorders.“  When consumed regularly, sour cherry juice can reduce muscle cramps and muscle fatigue caused by excessive sporting activities, …it also seems to act preventively against osteoporosis and strokes. 
Cherries have an antioxidant capacity of around 6800 µmol TE (ORAC value = Oxygen Radical Absorption Capacity). The body’s defence mechanisms are strengthened by foods rich in antioxidants, and this helps to neutralise excessive production of free radicals. The recommended ORAC daily requirement is between 5000 and 7000 .
Our organic sour cherries pieces with rice flour have a very fruity and very sourish taste. You can taste the rice flour, but the flavour is very neutral. The rice flour cannot be tasted fairtthey are without any further processing. The sour cherries pieces are of a pourable consistency, and are soft in texture.
Origin and Production:
We source our organic sour cherries exclusively from a remote mountainous region in Uzbekistan / Samarkand. Large parts of the region are certified for organic farming and are worked by the local organic farmers at harvesting time only. The farmers in this area have complied with organic cultivation criteria for many years and are proud of their contribution towards sustaining the natural balance.
After harvesting, the cherries are washed, pitted and then gently dried using solar energy. The drying process is very eco-friendly, using a solar drying method that has a minimal impact on the product.
Organic rice used in the flour is from Thailand or India, and is ground fresh into flour in our facilities.
The cherries are pressure treated and laser cleaned in Austria. During the pressure process, the combination of pressure and time ensures that the product is completely free of pests. When undergoing several rounds of cleansing in the laser cleaning facility afterwards, the organic cherries are checked individually to make sure they contain no impurities such as pits/ pit parts.
Final processing is also carried out in Austria complying with the highest quality standards.
